High quality musts from Italian grape varieties are cooked into a sweet and syrupy must then fermented together with some naturally fermented Italian Wine Vinegar. End product is a Balsamic Vinegar with balanced sweet and zest, which is then left in oak barrels for a minimum of 60 days to gain smoothness and aromatics of the wood flavor.
The Fig puree is from hand picked figs from California infused with the Traditional Balsamic Vinegar. Use it as a marinade, mix into salad dressing, or create a flavorful dipping sauce. Drizzle over ice cream for a quick dessert, or sprinkle on fresh fruit and cheese.
