Produced exclusively from Picholine variety olives grown in the Vallee-de-Provence, this aromatic extra virgin olive oil is characteristically intense, sharp and bitter and is often used as a flavor enhancer. It is highly distinctive, bringing out the flavor of early season vegetables, and works well with carpaccio of fish and tartare of ox with a dash of lemon juice. It is also the perfect oil for sorbets and ice creams. Pairs best with bitter green salads, roasted grilled vegetables, red meat, aged cheese, soups and stews.
